Pam Williams

Pam Williams has been involved in the chocolate industry since 1981 when she created her first chocolate endeavor, au Chocolat, in Vancouver BC. She founded Ecole Chocolat Professional School of Chocolate Arts in 2003 which delivers high quality educational programs to students all over the world. The Ecole Chocolat program curriculum offers what Pam considers to be the foundation for any successful chocolatier or chocolate maker—a complete understanding of the chocolate chemistry and flavor analysis, recipe development, production techniques/equipment and business issues.

As well as leading Ecole Chocolat, in 2006 Pam created chocomap.com to celebrate the chocolate industry and since 2011 includes a free mobile app, Find Chocolate, leveraging the chocomap directory of over 2400 chocolate shops. Her latest project is the book Raising the Bar: The Future of Fine Chocolate to be published in fall 2012. Pam received the 2011 Fine Chocolate Industry Association’s Recognition of Excellence in Service to the Industry.
