Our Nutrition and Food Science Program

The Nutrition and Food Science Program at Montclair Sate University is a dynamic and multidisciplinary field encompassing the entire food system – which essentially starts on the farm and ends on the plate – as well as nutrition, food science and its relationship with human health issues and their application in prevention and treatment at both the population and individual levels. It was the home of the acclaimed International Conference on Culinary Arts and Sciences (ICCAS), held in June 2015. Faculty and students in the program conduct investigations in the areas of sensory analysis of food, food history, nutritional values of food, food science, food and nutrition effects on cultural groups, the food production and impact on the environment, food safety and studies that assess the effects of food properties on emotions. State-of-the-art laboratories support these research studies. One particular ongoing project utilizes olfactometry and face-reading technology to consider consumers’ emotional responses to chocolate.

In addition to the judging component, the awards program will include presentations by faculty, students, invited chefs and scholars who will speak on current projects related and contextual to chocolate. You will also get to meet our faculty and our students. External excursions and tours of Montclair State University facilities and Nutrition and Food Science laboratories will be offered.
